About the Author
The Culinary Institute of America (CIA), hailed by Time magazine as "the nation's most influential training school for professional cooks," is the author of some of the most significant works for professionals and students.

The oldest culinary college in the United States, The CIA was founded with 50 students in 1946 by Frances Roth and Katharine Angell as the New Haven Restaurant Institute. In 1947, the college relocated to a 40-room estate near Yale University and changed its name to the Culinary Institute of Connecticut. The name was changed to The Culinary Institute of America in 1951 to reflect the college's national student population. In 1972, with a student body of 1,000, the college relocated to its present home, the former St. Andrew's-on-Hudson in Hyde Park, New York, originally a Jesuit seminary built at the turn of the century.

Today, more than 2,100 students representing every state and several foreign countries are enrolled in the college's bachelor's and associate degree programs in culinary arts and baking and pastry arts. This volume is fantastic. It is encouraging to see culinary professionalism displayed so everyone can see the bones of it. I am a chef and enjoy its purism and sense of direction. It is a great culinary tool for myself and my cooks. I am currently teaching a class in garde manger for which I have ordered this book as a text. This is a must for your collection.

Excellent reference and guide

Many of the readers have commented that this book is for professionals only. I happen to disagree with this opinion as there are no prerequisites required to understand the instruction given within. Having said this, if you are not even curious of understading the fundamentals of lets say for example, sausage making, there is no need to buy this book, you can find great sausage at the grocery store without the hassle of making it at home.

So this book, yes it is for professionals but also for anybody who wants to understand (and even apply)the nuts and bolts of the cold kitchen. Personally I think that understanding the method that is used to prepare something, gives one a greater appreciation of that something when it is offered to him/her.

So for all of you non-professionals, if you are simply curious, about how to make salad dressings, terrines, or bologna for that matter, this book is written in laymans terms and will be an interesting journey into the world of Garde Manger.

Encyclopedic Authority on Cold Food Prep and Service

One could compare this book, `Garde Manger' by the Culinary Institute of America to Martha Stewart's `Entertaining' like a comparison of Richard Feynman's Lectures on Physics to a popular history of 20th century physics. Unfortunately, that comparison does not hold up. The more appropriate comparison would be between a technical work on wood joinery to a glossy `This Old House' imprimatur book on cabinet making. The difference between the classroom and the home kitchen is simply not that large. One can even bend the simile around on itself to say that the laboratory in which new culinary thoughts arise is in the home kitchen and not in the teaching classrooms of the Culinary Institute of America.
All this playing with comparisons is simply meant to make the point that while this book is presented as a textbook by the most prestigious culinary training institution in the country, it's material is simply not that different from a book with more obviously commercial origins.
This book does have a lot of material you will not find in a Martha Stewart or Ina Garten or Paula Deen book. High on the list of interesting background information is the history of how the French Revolution may have been a major contributor to the rise of restaurants and the great strength and variety in French cuisine.
The real story here is cold food and how it is prepared and served in (French) restaurants. On this subject, this book is a delightful source of both recipes and Alton Brown / Shirley Corriher type background. Honestly, the true culinary counterpart to Feynman's lectures would be Harold McGee's oft quoted books on food science.
This CIA book gives a wealth of recipes for salad dressings and other cold sauces, cold salads, sandwiches, cured and smoked foods, sausage, forcemeats, cheese, hors d'oeuvres, appetizers, condiments, and basic recipes (spice mixes and the like). One thing that immediately endeared me to the book is its treatment of vinaigrettes, which easily outdoes even Martha Stewart's better than average treatment. This material is worth the price of admission. Another service it supplies, with the authority of a teaching institution, is to simplify some culinary terms. For example, it always bedeviled me to know the difference between, for example, a relish, a salsa, and a chutney. Turns out that they simply are three different words for the same basic preparation. Like `plains', `veldt', and `pampas', they are different words for the same thing reflecting three different ethnic sources.
The chapters on curing and sausage may interest fewer readers than most, but there is much you can get from these chapters even if you never make a sausage. I was particularly struck by the fact that government regulations require that pork used in sausage making be `certified'. That's a little fact that people like Emeril and even Alton leave out of their little how to shows on sausage making. As a great believer in serendipity, I believe you never can tell what inspiration you can get from unfamiliar material. Here lies the greatest value to this book. It tells you a lot of the things which more popular treatments of the same subject can easily overlook. This includes things like sanitation, shelf life, and equipment care. As an aging hippie whose fantasies were fueled by the `Whole Earth Catalogue', I find the chapter on cheeses to be worth a month's run of `Good Eats' shows.
One can say that this book is really meant for the restaurant professional, but I believe it has many uses for the home cook. The most important use is as a resource for making pantry items like prepared catsup, mustard, relish, crackers, spice mixes, salad dressings, and stocks which one may typically buy at the supermarket. If you put your mind to it, you will certainly attain a better tasting product. What may be more important is that you will also certainly attain a better tasting product with no laboratory chemical ingredients.
For the real foodie, this book is a treasure. It gives recipes for lots of things few other books take the trouble to cover. The danger to the newbie is that they may not see those points at which the book's coverage is not complete. One area is in the recipes for stocks. These recipes are `bare bones' instructions with none of the usual cautions and explanations given in some other books. If you are really serious about stock making, consult `Jeremiah Tower Cooks' or Judy Rodgers's `The Zuni Caf� Cookbook' or even the CIA's `New Professional Chef' text. One can excuse this somewhat since these are hot preparations in a book about cold food. I would have preferred a reference to a work that gave the subject a more complete coverage.
One irritating thing I find in some reviews is a complaint about something which is outside stated range of the book. This book is about cold food. Do not expect details on baking or hot cuisine. Any material on those matters should be taken as a convenience to the reader.
I was a bit surprised to find at least one typo in this textbook by a respected school, published by textbook specialist Wiley. I found no errors that will mislead the home cook.
The book has several features I consider essential in a textbook. One is an bibliography. Another is a list of sources. Another is a glossary of terms. Another, very important, is an index of recipes.
This book is excellent if you are building a culinary library or do a lot of entertaining or are especially fond of salads and sandwiches, or simply like to read about food. The only reservation an interested reader may have is the price. The $60 list price inhibited me for several months, but I believe the book is worth it if you do any entertaining or make any quick cold lunches in your kitchen. Highly recommended.

Tremendous Insight Into Mind of Maxwell

Having read several of Maxwell's books over the years, I knew I was in for a treat before starting this read. However, what grabbed me about this book is that Maxwell and his team decided to take a couple of years and narrow down the questions most asked about leadership and then compile them categorically into a readable format. The result is a real glimpse into the mindset of John Maxwell, known as one of the top leadership gurus in the world. Add to the fact that he is a Christian and served as a pastor for many years and you have a fascinating read and insight into one of the keenest minds on this important subject of leadership.

The book is broken down into two parts: 1) Questions I Ask and 2) Questions Leaders Ask Me. Under the two parts the following questions are answered:

The three chapters that were most helpful to me were "What Must I Do to Lead Myself Successfully?", "How Do I Resolve Conflict and Lead Challenging People?", "How Can I Successfully Navigate Leadership Transitions?"

I underlined, starred, and marked up so much of this book, I don't know exactly what to include in this review. I do know that if you have any type of leadership role or have a desire to learn leadership, this is a tremendous book. As always with Maxwell's books, this volume is infused with applicable anecdotes and timely quotes.

Here are a few of my favorite parts of the book:

When I was a young leader, I didn't feel wise enough, strong enough, mature enough, competent enough, confident enough, or qualified enough. When I began to be honest with myself, allow my weaknesses to humble me, and go to God for help, I began to change. I became more open and authentic. I was willing to admit my mistakes and weaknesses. I developed appropriate humility, and I began to change and grow...Before I had been unwilling to be wrong, and as a result I had been unable to discover what was right. Isn't it strange how we must surrender being right in order to find what's right, how humility enables us to be authentic, vulnerable, trustworthy, and intimate with others? People are open to those who are open to them.

If you are a leader, your goal is to lift up your people, not have them lift you up.

If you are a leader, the true measure of your success is not getting people to work. It's not getting people to work hard. It is getting people to work hard together.

Attention all leaders and new leaders!

Omg. This is a must have for a new leader who needs direction and guidance for leading teams. This is a must have for an existing leader looking to move up and lead other leaders! In fact, to ask these types of questions and regard leadership in this way, influence and persuasion will be tools in your arsenal that john maxwell will equip you with!

I was so impressed that I took 21 pages of typed notes. I'm moving to a new team im my company that everyone else turned down because it seems like a "challenge" department. But to me and with these tools provided in this book, I'm excited. John has info on how to build credibility and trust with new teams immediately. He has insight on why teams are considered "challenge" or troubled in the first place. It's usually due to poor leadership. And with these questions there are ways and strategies to turn it around quickly.

Buy the book only if you are serious and ready to work at changing your mindset and putting forth effort in the right place to propel your team forward!

Disappointing in Comparison to Other Maxwell Titles

In comparison to other Maxwell books I have read there are some good nuggets of information, but this one is really overwhelming with way too many references to his other books and what comes across as grandstanding on how great of a supervisor Maxwell is. It was very hard to complete this book unlike my experiences with his other work. If you have enjoyed other Maxwell books, I believe you will find this one a bit disappointing.

A light hearted, Breezy and Simple school Mystery

Its been a log time I have read a Mystery for kids.
A kid acting as a PI and having unusual side kicks.

The Story is about a Boarding school HeathCote and Pandey(aka POJO) trying to solve mysteries in the school. He solves people losing their articles , pranks being played for favors.

Mr. HeathCote(The cat) the Symbol of the School has been around the school as is the Lucky charm of the school. Its the pride and is believed to looking after the school.
Mr HeathCote is Found dead and and next day the body is CATNAPPED. Our Hero POJO jumps in and tries to solve the mystery. Along the way come POPS and RADHA and help him solve the mystery.
POJO has lots of suspects and systematically eliminates them and in true Sherlock/Poirot style reveals the mystery in the end.

Its a sweet book although little stretched. you will be fascinated with the way author has intermingled the Hostel life and the mystery.
Every element of the hostel life has been highlighted , from Senior-Junior divide to, bad meals to punishment so inter school rivalry.
The best part being the way these have been merged into the story.
The characters are lovable and give a warm feeling to the readers.
There are parts when the book gets stretched and is little drag. specially the introspection by POJO.
I loved POPS and his enthusiasm.

Overall a lovely book

Nostalgia 101

I just bought and read this book

It took me back to my school days. In the summer vacations when the sun beat mercilessly on the coppered grass - I'd get a tall glass of Rooafza, find a comfortable breezy nook and start reading all my Enid Blyton's. I found the same feeling again today. The same stories and mysteries - the only difference is that I can finally relate to them. They don't feel imaginary and distant.

I feel like I'd been in the book. That I am Pojo or Pops.

Nostalgia 101 smacking me in the face.Go loose your self. Its a wonderful book.

Loved the book. The author is great at bringing the story to life - as I turned through each page, I could imagine myself actually being there seeing the mystery unfold. The characters are well-developed and delightful. I highly recommend this one.

The gaijin observer…and participant…

…but never a “fly-jin.” This is the third book of Michael Pronko’s that I have read; the other two being Beauty and Chaos: Slices and Morsels of Tokyo Life and Tokyo's Mystery Deepens: Essays on Tokyo. Each have provided deep insights into a country I find profoundly fascinating. So when I was offered this third volume for review, I again was not disappointed; Pronko still has much of value to convey. “Gaijin” is the Japanese word for foreigner, often used disparagingly, and conveying, in part, the meaning that no foreigner can possibly understand us- we are simply that unique. After the March, 2011 earthquake, tsunami and accompanying nuclear power plant disaster at Fukushima, the foreigners fled Japan in droves, so much so that their new name become “fly-jin.” Pronko stayed – of course, in part his decision was influenced by the fact that he has a Japanese wife. He related an incident of being in a shop, and the shopkeeper simply thank him for not leaving. He said in effect: why should I, this is home.

As he approaches two decades of Japanese residency, his insights are all the more valuable since he relates the changes occurring in the Japanese (as well as himself) over that time span. For example, he has noticed a greater willingness for the Japanese to now look you in the eye, as opposed to the traditional lowered glance of deference. In terms of one of their pop-culture icons – wearing T-shirts with English sayings and expressions – they have gone from the grammatically incorrect and/or incomprehensible to the “droll and eloquent,” though the wearer still might not understand its meaning and implications. A more traditional “icon” of Japanese life and style – the futon – is also on the decline. Their maintenance and care is simply too much work. The author quotes a 2012 survey that indicates that two-thirds of Japanese now sleep in beds.

This is a collection of 41 essays, all dedicated to a particular slice of Japanese life. Many “slices” are unique to this collection; others are continuations of topics from earlier works – such as his lament about the fact that the trains do not run all night. In one essay he relates how impeccably dressed the Japanese normally are (except in summer), and how he was stopped FOUR times by the police while on his bicycle – no doubt because he was dressed, well, much as I am when I ride my bike (that is, not “impeccably”). And the police are stunned when he shows them his ID as a college professor.

Other topics include the ubiquitous dependence on cell phones, the skills involved in fitting things into tight spaces, the also ubiquity of plastic, the constant state of construction throughout the city, while life goes on, and the “symphony” of sounds that is Tokyo. He has a section of five essays on the impact of the March, 2011 earthquake as well as subsequent ones, as recently as last year. For me, he closes on a very high note, one of the major appeals of Japan: serenity. And in ways, it co-exists alongside the frenzied activities in one of the most not serene cities. I particularly liked his essays on the “nature people” of Tokyo, who provides the green patches in the concrete jungle, and the jazz clubs. Fittingly, he ends with “hanami,” the cherry blossom festival. For a few brief moments, at sunset, the entire sky is pink, a “fluke of atmosphere.” He concludes with: “The memory of that blanketing pink offered a reminder that beauty shows up on schedule, but it also arrives in swift gusts of vivid surprise.” May there be many more left. For Pronko’s third work, also 6-stars.

This is a delightful collection of essays on Japan. The author is very familiar with Japan and his writings give you an insightful look at another country. You can even see how the Japanese view other nations. What language do you speak? Some Japanese speak English very well while others prefer their native tongue. As an American you might be used by students for English practice. The essays cover varied topics including how much care is taken into their appearance. While a fascinating read because of my attention span it got a little slow from time to time. It is done well and very informative. We can certainly learn many things from other cultures.

What Michael offers us in this luminous collection of essays is the opportunity to view life in Tokyo from both sides - the side we know from myth, history, literature and films and tales from fiends who have visited this fascinating city and the side as shared by the Japanese and by Michael who lives in and knows the city so well. From page one on Michael offers his own brand of insight, humor, philosophy that allows us to ee Toyko for the first time in situ: ‘The other day, for the first time, a young woman sitting on the Chuo Line train won the contest of “who will look away first.” In the past, I could always stare longer than anyone in Tokyo, but this Tokyo woman outstared me. I felt surprised, and maybe a little humiliated, that she could hold the eye contact longer than me— a Westerner! When I first came to Tokyo eighteen years ago, I felt bewildered because no one met my eyes. At the time I wondered: was something wrong with me? I felt alienated, anonymous, unseen. Shopping, teaching or walking around, it was hard to get a clear look into the heart of the city since people’s eyes quickly shuttered. Of course, I knew that in Asian countries eye contact carries vastly different meanings than in America where I’m from. In Asia— Japan especially— downcast eyes express humility and respect. But when eyelids clamped down, I felt the human side of the city was veiled and hidden from me.’

Great tool for identification, and learning

I botanize in California. As a professional botanist, a book like this is essential to my work. I also live and teach botany outside of California. After going over my personal copy for a week, I can see real value in getting some additional copies for student use for the lab portion of my course. The second edition follows on the first edition in having a very useful family-level key. I emphasize family level sight recognition in my teaching, but students have to learn that skill and using a family level key is critical during the learning process. A plant like Larrea (creosote bush) technically has a compound leaf; but with only two leaflets, someone who doesn't know that is likely to interpret it as a simple leaf. With TJM2, you will successfully key it out either way.

Scientific knowledge of plant family boundaries and relationships have increased dramatically over the past 20 years, and TJM2 has taken the important, but likely uncomfortable step for some, of following a modern circumscription of families. But the editors didn't arbitrarily just pledge allegiance to treatments such as the Angiosperm Phylogeny Group II or III (the compilation of TJM2 easily predated APGIII). For example, APGIII treats a huge diversity in the single family Asparagaceae; TJM2 favors recognizing a number of smaller families. Ditto for Caprifoliaceae, which encompasses all but Adoxaceae in APGIII, but here is treated as Caprifoliaceae, Dipsacaceae, Linnaeaceae, etc. Monophyly is an important objective for both APGIII and TJM2 so recognizing Sarcobatus in Sarcobataceae outside of Amaranthaceae is followed in both. I personally like the approach of TJM2 over APGIII for the examples given above.

Two aids are presented that really make the revised family level taxonomy accessible to non professionals. First, a phylogenetic tree is presented on the two pages of the inside back cover. This will be incredibly useful as a learning aid for students. I know some students that have taken a range-plant ID course are going to balk at hearing me teach Amaranthaceae as inclusive of Amaranthaceae and Chenopodiaceae, but excluding Sarcobataceae. The phylogentic tree provides a ready reference for students to see the phylogenetic distance between Sarcobataceae and Amaranthaceae. At the same time, they can see how Caprifoliaceae, Linnaeaceae, etc form a monophyletic group and why another author/book/APGIII might recognize just one larger Caprifoliacaee. Kudos to the editors for adding this detail! On the tree, the family names are followed by the first page number of their treatment--another useful touch.

The second aid to help with using new family circumscriptions is that, under the traditional family, the new family assignments for genera treated within that family in TJM1 are given. For example, Portulacaceae only includes the genus Portulaca now; other genera in California such as Lewisia or Claytonia are now recognized as Montiaceae. Under the family description for Portulacaceae, the reference to Montiaceae is given. Same for Scrophulariaceae where the family treatment clearly points one to Phrymaceae for Mimulus, Plantaginaceae for Penstemon, Orobanchaceae for Castilleja, etc. Useful, even for us professionals who try to keep up with the taxonomic literature but have to rewire our brains for some things long entrenched in practice. Even though TJM2 doesn't overlap entirely with all genera and species in my state, I can see I will use it as a reference with my local flora a lot.

Like TJM1, family and generic treatments and keys were written by a large group of experts (hundreds) with more or less experience and familiarity in their respective groups. Combined with inherent difficulties in recognizing some species and genera, I expect some keys to work better than others throughout the book. This is true also because the editors attempted to limit the complexity of botanical terminology used in the book to make it more accessible to laymen. In practice, the limited terminology results in some oversimplification or imprecision, but over all may have merit (technical terms exist for a reason; I'm reserving my verdict for now).

The illustrations for many representative species will continue to be useful and are appreciated.

Because taxonomy isn't static, further changes beyond the text are being updated online -- another enormous task in itself -- and URLs are given in this book at the front. Kudos to all involved for contributing to such a useful resource.

Cheaper production than 1993 edition

Unfortunately, if one is serious, one must buy this edition. But it is printed more cheaply than 1993 edition (like on onionskin) and feels cheap (printed on very thin but not top quality paper - just thin and cheap).

I also bought the digital version. Expensive. I am NOT impressed with it. Jepson people seem to be at about the DOS or maybe Windows 3.0 level of skill in converting their tome into something to use digitally - very minimal hypertext function. Very limited.

It is very cumbersome to use, though I have a pretty powerful computer, and not too interesting to use. I had hopes of being able to extract different families to make my own sub-text but that seems impossible.

I was hoping to use the digital version in the field for ID purposes but one would absolutely need a fast laptop. I had hopes of putting on a tablet. Not likely. Way too slow.

FOLLOW-UP NOTE: Not having a tablet (iPad or similar) I managed to put Jepson onto my Samsung Note 3. BUT it is totally worthless on that medium. EXTREMELY slow navigation, no search function, way too little displayed per screen, no bookmarking function, just plain worthless on that machine which is otherwise wonderful for most things.

SECOND FOLLOW-UP NOTES:
CAVEATS: I definitely implied that "The Jepson People" were responsible for the lesser quality paper (and lesser grand tome, compared to 1993 version, though, of course, the 2012 edition goes way beyond the earlier one content-wise ... and what really matters anyway?). My mistake! I understand from later interaction with UC Press and from reading MR. Ferguson's comment (below) that the Jepson people tried to do all the right things but it was not their call. UC Press is responsible. But then they are great people as well. I have dealt with them in regards to the Adobe Digital Editions ebook version of Jepson and they were nothing but helpful. Indeed, they were somewhat dismayed by the way the digital version came out - specifically were not happy with handling of the drawings. Apparently Adobe dropped the ball or something.

SUGGESTIONS: 1 - get the Kindle version of the ebook. UC Press will give you a link to use that better, faster version of the digital Jepson manual. 2 - bookmark the "eflora" web site for the Jepson manual. It has a nicely collected set of resources readily to hand for each and every taxon. 3 - I find if I use Kindle version with Epub version open as well and have computer in portrait mode (turned 90 degrees), then I can have the best of both worlds - fast access with Kindle version and the largest possible representations of the drawings through ePub version - but ONLY if computer monitor is rotated! If monitor is not rotated, the ePub version will truncate all drawings that are larger or largest sizes. With monitor turned, I get no loss of graphics even at largest sizes.].

An indispensable tool.

I work as a field biologist and am frequently called upon by other members of my team to help ID mammals, herps, and arthropods (they're all more-than-competent birders), which poses no problem for me.

However, my botanical identification skills are somewhat rudimentary and I finally decided to break down and add this important tool to my arsenal. I've known of its existence for decades, but have never gotten around to purchasing it until now. I can already see that it will more than fill my needs, not only in identifying individual species, but in recognizing ecological plant communities as well.

The section on geographic subdivisions of CA (pp. 35-48, especially the map on page 43) is almost worth the price of admission itself.

Just Horrible.

This is absolutely horrible! 90% of the book is just "get a doctor's opinion and medication", and the little bit about home remedies just re-iterates both the good internet theories and every bad one. There is honestly no purpose in this whatsoever. The author even had comments like "I think this is bad for you". Really? You didn't bother to research to see if it was??!?!?!

This book could change your life!!

THESE METHODS WORK! To say I am ecstatic is an understatement!!! I searched Amazon during an RLS flare up and instead of looking for help from an author who is a Dr, I thought who better to write a book on what is really effective then a fellow RLS sufferer who can tell me what actually works for her and not a random Dr with his little philosophies on what "should" work. OMG, this woman is a genius who did a boatload of research and compiled it in a sweet summary! I did an MSLT several years ago and was diagnosed with RLS among several other sleep disorders. I've been on Ropinirole for it for ages and keep having to up the dose every several months, so am super grateful to have finally stumbled upon some natural treatments.

She has a lot of great info on symptoms, diagnosis, and stuff like that but since I was in a flare-up I skipped straight to chapter 8 on my Kindle which is packed with loads and loads of remedies. I promise, there's no way you'll walk away from reading this without finding one that helps you! I experienced relief literally within seconds of trying one of her methods. And these aren't some fishy weird homeopathic things, all are backed by solid scientific research which she explains in layman's terms when presenting each one. I cannot wait to try more! Emily, from the bottom of my heart, THANK YOU!!! You're a total God-send! This book was worth every penny and then some. Very hopeful I will soon be able to quit the the Ropinirole with trying these treatments.

If I could I would give this book more stars. It is a must read for RLS sufferers. I have been one for over 50 years (heredity) and did not know half of what is in the book. I suffer from muscle jerks day and night. My doctor has tried the latest drugs. Repinirole helps some but I am maxed on it and it leaves me sleepy during the day. Using several of the suggestions in the book have made it bearable now. The book has helped so much that I purchased two additional copies for my daughters as they are sufferers as well.
